Coconut "Ice Cream"

2 cans coconut milk
4 egg yolks
3-4 TBSP honey
vanilla or vanilla bean


Heat the coconut milk, eggs, and honey until the mixture thickens. Remove from heat add vanilla and then cool in the fridge. Once cooled put in ice cream maker and follow the manufactures instructions.  You will be enjoying an ice cool treat in just 35 minutes! 

Any fruit can be added to the coconut milk and pureed before you cook the custard.
